D-Tagatose

D-Tagatose (CAS 87-81-0, C6H12O6, MW 180.16) is a monosaccharide rare sugar, a ketohexose epimer of fructose, with roughly 90% of the sweetness of sucrose at reduced metabolisable energy. It is most commonly manufactured from milk-derived lactose or cheese whey, which is hydrolysed to galactose and then isomerised to tagatose, so it is declared as dairy-derived and is not suitable for vegan lines. It shares the hexose formula of the other simple sugars but is only partially absorbed. It is supplied as a white crystalline powder and manufactured into powders, tablets, gummies and capsules.
