Quercetin anhydrous is the water-free crystalline form of the flavonol aglycone quercetin (CAS 117-39-5, EC 204-187-1, C15H10O7, MW 302.23), commonly extracted from Sophora japonica flower buds or Dimorphandra mollis pods. Containing no water of crystallization, it has a lower molecular weight and a correspondingly higher quercetin content per unit mass than the 338.27-MW dihydrate grade. Like the dihydrate it is the sugar-free aglycone, which distinguishes it from the glycoside forms isoquercitrin and EMIQ, and it is a single defined molecule rather than the phospholipid phytosome complex. It is offered as a >=95% HPLC crystalline powder and manufactured into capsules, tablets and powders.
