Ethyl Vanillin

3-Ethoxy-4-hydroxybenzaldehyde

Ethyl Vanillin is 3-ethoxy-4-hydroxybenzaldehyde (CAS 121-32-4, C9H10O3, MW 166.17), the ethyl homologue of vanillin and a synthetic vanilla flavouring roughly three times as potent as vanillin with a smoother, creamier note. It is produced by chemical synthesis to an FCC grade of at least 99% and, as a synthetic single compound, is kept distinct from the naturally sourced flavour range. It is supplied as a white to pale-yellow crystalline powder and manufactured into powders, tablets, gummies and liquids.
