Stevioside (CAS 57817-89-7, EC 260-975-5, C38H60O18, MW 804.9) is the principal steviol glycoside of the Stevia rebaudiana leaf, standardised to >=90-95% on a dry basis. It is recovered by aqueous extraction of the dried leaf followed by purification and crystallisation. At MW 804.9 it is the lowest molecular weight and least glucosylated of the isolated glycosides offered here, below Reb A (967.0), Reb D (1129.2) and Reb M (1291.3), and it is the only stevia form in the range carrying an assigned EC number (260-975-5). Supplied as a white to off-white crystalline high-intensity sweetener powder, it is manufactured into powders, tablets, capsules and liquids.
