Capsanthin is the principal red xanthophyll of paprika, (3R,3'S,5'R)-3,3'-dihydroxy-beta,kappa-caroten-6'-one (CAS 465-42-9; C40H56O3, molecular weight 584.85), the main pigment of the paprika oleoresin catalogued as E160c. It is extracted from the fruit of red paprika and pepper (Capsicum annuum) and standardised to a stated capsanthin or total-carotenoid content by colour value. It is an oil-soluble deep-red pigment supplied as an oleoresin. We manufacture it in softgels, capsules, powders and liquids.
