Sodium Copper Chlorophyllin is a water-soluble green colour designated E141(ii), made from plant chlorophyll by replacing the central magnesium with copper and saponifying to the sodium salts; a representative component is the trisodium salt C34H31CuN4Na3O6 (CAS 11006-34-1, MW 724.15), though the commercial material is a mixture of related copper chlorophyllins standardised for colour strength. The copper complex is far more stable to light and pH than native chlorophyll, giving a consistent blue-green to green shade. It is supplied as a dark green powder and manufactured into powders, liquids, gummies and capsule shells.
