Guar Gum

Guar galactomannan

Guar Gum is a galactomannan polysaccharide (CAS 9000-30-0) extracted from the seed endosperm of the guar bean (Cyamopsis tetragonoloba), designated E412. It hydrates in cold water to give high viscosity at low use levels and is used as a thickener, suspending agent and soluble-fibre ingredient; it is offered in viscosity grades defined by particle size and hydration rate rather than a single molecular weight. It is supplied as a white to pale-yellow free-flowing powder and manufactured into powders, liquids, gummies and capsules.
