Natural L-menthol is the single cyclic monoterpene alcohol (1R,2S,5R)-2-isopropyl-5-methylcyclohexan-1-ol (CAS 2216-51-5, C10H20O, molecular weight 156.27), the levorotatory isomer that gives a minty flavour with the characteristic cooling organoleptic sensation. It is isolated from Mentha arvensis (cornmint) oil and standardized to at least 99 percent l-menthol at FCC grade. In contrast to the proprietary flavour systems, it is a single stereochemically defined isolate with its own CAS number, and unlike the microbially produced vanillin it is obtained by isolation from a botanical oil. It is supplied as menthol crystals and is manufactured into tablet, capsule, softgel and powder dosage formats.
