Erythritol (Granular) is meso-erythritol (1,2,3,4-butanetetrol; CAS 149-32-6, EC 205-737-3), a four-carbon sugar alcohol (polyol) with the formula C4H10O4 and a molecular weight of 122.12. It is produced by microbial fermentation and supplied as a standard crystalline granulation standardized to typically >=99.5% erythritol. Unlike the confectioners powder grade, which is milled to a fine particle size, this granular grade retains coarser, free-flowing crystals; and unlike the erythritol-stevia and erythritol-monk-fruit blends it is a single-component polyol carrying no high-intensity co-sweetener. It functions as a bulk sweetener and bulking agent, and we manufacture it into powders, tablets, gummies and capsules.
