Crocin (Saffron / Gardenia)

Crocetin di(beta-D-gentiobiosyl) ester (crocin-1)

Crocin is the water-soluble carotenoid pigment of saffron and gardenia, the di(beta-D-gentiobiosyl) ester of crocetin (crocin-1; CAS 42553-65-1; C44H64O24, molecular weight 976.96). It is extracted from saffron (Crocus sativus) stigmas or from gardenia (Gardenia jasminoides) fruit and standardised to a stated crocin percentage by HPLC. Unlike the family's aglycone grade, crocetin, it carries two gentiobiose sugar units esterified to the carotenoid diacid, which give it its high molecular weight and its unusual water solubility for a carotenoid. It is supplied as a dark-red powder. We manufacture it in capsules, tablets and powders.
