Annatto (Bixin)

Bixin (annatto carotenoid)

Annatto is an orange to yellow carotenoid colour designated E160b, extracted from the seed coat of the achiote tree (Bixa orellana). The oil-soluble principal pigment is bixin (CAS 6983-79-5, C25H30O4, MW 394.50), while alkaline hydrolysis converts it to the water-soluble norbixin (C24H28O4, MW 380.48), so the family is offered in both oil- and water-soluble grades to suit the matrix. It gives warm yellow to orange shades depending on grade and level. It is supplied as an oil suspension, a liquid or a powder and manufactured into softgels, oil-based liquids, gummies and powders.
