Beetroot Red (Betanin)

Betanin

Beetroot Red is a natural red colour whose principal pigment is betanin, a betalain glycoside (CAS 7659-95-2, C24H26N2O13, MW 550.47), designated E162 and obtained from the juice of red beet (Beta vulgaris). It gives pink to bluish-red shades that are brightest in slightly acidic, low-temperature conditions and that fade with prolonged heating, so it is best suited to gummies, cold-processed liquids and coatings; commercial grades are standardised for colour strength, commonly on a carrier such as maltodextrin. It is supplied as a red to purple powder and manufactured into powders, gummies, liquids and tablet coatings.
