Saccharin

1,2-Benzisothiazol-3(2H)-one 1,1-dioxide

Saccharin is 1,2-benzisothiazol-3(2H)-one 1,1-dioxide (CAS 81-07-2, C7H5NO3S, MW 183.18), a high-intensity sweetener designated E954 and roughly 300 to 400 times sweeter than sucrose. It is produced by chemical synthesis; this grade is the sparingly soluble free acid, while the more soluble sodium saccharin salt is widely used where rapid dissolution is required. It is heat and pH stable, which suits a broad range of processing. It is supplied as a white crystalline powder and manufactured into powders, tablets, liquids and gummies.
