D-Allulose (D-psicose)

Allulose (Crystalline) is D-allulose, also called D-psicose (CAS 551-68-8, C6H12O6, MW 180.16), a monosaccharide rare sugar that is the C3 epimer of D-fructose and carries about 70% of the sweetness of sucrose at close to zero metabolisable energy. It is produced by enzymatic epimerisation of plant-derived (corn) fructose, then purified and crystallised to a free-flowing solid. Although it shares the simple hexose formula of glucose and fructose, it is poorly metabolised, which separates it from the bulk nutritive sugars. It is supplied as a white crystalline powder and manufactured into powders, tablets, gummies, liquids and capsules.
