Anthocyanins (Fruit and Vegetable)

Anthocyanins (mixed plant flavylium glycosides)

Anthocyanins are a class of water-soluble plant pigments (flavylium glycosides) designated E163 and sourced from fruits and vegetables such as black carrot, grape skin, purple sweet potato and elderberry. As a mixture of related glycosides they are specified by source and standardised colour strength rather than a single CAS number, molecular formula or weight. Their shade is strongly pH-dependent, red in acid, through purple, to blue-green in neutral to alkaline conditions, so the source is chosen to match the target colour and acidity. They are supplied as red to purple powders or liquids and manufactured into powders, liquids and gummies.
