Aspartame

N-L-alpha-aspartyl-L-phenylalanine 1-methyl ester

Aspartame is the methyl ester of the dipeptide of L-aspartic acid and L-phenylalanine, N-L-alpha-aspartyl-L-phenylalanine 1-methyl ester (CAS 22839-47-0, C14H18N2O5, MW 294.30), a high-intensity sweetener designated E951 and roughly 200 times sweeter than sucrose. It is produced by chemical synthesis and supplied to Ph.Eur./USP/FCC grade at an assay of 98.0 to 102.0%. Because it is hydrolysed by heat and low pH it is best suited to powders and tablets rather than high-temperature processing, and as it contains phenylalanine, finished products must carry a declaration for people with phenylketonuria. It is supplied as a white crystalline powder and manufactured into powders, tablets and capsules.
