Brazzein is a small sweet-tasting protein of 54 amino acids and a molecular weight of about 6,500 daltons, originally isolated from the fruit of the West African plant Pentadiplandra brazzeana and now also produced recombinantly. It is roughly 500 to 2,000 times sweeter than sucrose and is unusually heat and pH stable for a protein, which distinguishes it from thaumatin. As a protein it is characterised by approximate molecular weight rather than a molecular formula and has no single assigned CAS number, and its regulatory approval status varies by market. It is supplied as an off-white powder and manufactured into powders, tablets and liquids.
