Carmine (Cochineal Red)

Carminic acid

Carmine is a red colour based on carminic acid (CAS 1260-17-9, C22H20O13, MW 492.39), designated E120 and produced from the dried bodies of the cochineal insect (Dactylopius coccus). It gives stable red to pink shades with good heat and light fastness, the hue shifting with pH, and the commercial lake or liquor is standardised on carminic acid content. Because it is insect-derived it must be flagged for vegan and vegetarian lines. It is supplied as a red powder or liquor and manufactured into powders, liquids, gummies and tablet coatings.
