Carrageenan (sulphated galactan from red seaweed)

Carrageenan is a family of sulphated galactan polysaccharides (CAS 9000-07-1) extracted from red seaweed, designated E407 and supplied in kappa, iota and lambda types that gel or thicken to different textures. The gelling types set firm, brittle to elastic gels with potassium or calcium ions and are used as a plant-based alternative to gelatine in vegan gummies, while the non-gelling type suspends and thickens liquids; it is specified by type and gel strength rather than a single molecular weight. It is supplied as a cream-coloured powder and manufactured into gummies, liquids and capsules.
