Ethyl Maltol

2-Ethyl-3-hydroxy-4H-pyran-4-one

Ethyl Maltol is 2-ethyl-3-hydroxy-4H-pyran-4-one (CAS 4940-11-8, C7H8O3, MW 140.14), the ethyl homologue of maltol and a synthetic flavour enhancer with a sweet, caramel and cotton-candy aroma several times stronger than maltol. It is produced by chemical synthesis to an FCC grade of at least 99% and is used at low levels to round and lift sweetness and aroma; as a synthetic single compound it is kept distinct from the naturally sourced flavour range. It is supplied as a white crystalline powder and manufactured into powders, tablets, gummies and liquids.
