Isomalt

Isomalt (equimolar 6-O-alpha-D-glucopyranosyl-D-sorbitol and 1-O-alpha-D-glucopyranosyl-D-mannitol dihydrate)

Isomalt (CAS 64519-82-0) is a sugar alcohol designated E953, supplied as an essentially equimolar mixture of two disaccharide alcohols, 6-O-alpha-D-glucopyranosyl-D-sorbitol (GPS) and 1-O-alpha-D-glucopyranosyl-D-mannitol dihydrate (GPM); each component shares the anhydrous molecular formula C12H24O11 (MW 344.31). It is produced in two stages from sucrose, enzymatic rearrangement to isomaltulose followed by hydrogenation. Its very low hygroscopicity and good heat stability distinguish it from maltitol and sorbitol and make it well suited to hard-boiled lozenges. It carries roughly 45 to 65% of the sweetness of sucrose, is supplied as a white crystalline solid and is manufactured into powders and tablets.
