Isomaltulose (Palatinose)

6-O-alpha-D-glucopyranosyl-D-fructose

Isomaltulose, trade name Palatinose, is the reducing disaccharide 6-O-alpha-D-glucopyranosyl-D-fructose (anhydrous CAS 13718-94-0, C12H22O11, MW 342.30), a structural isomer of sucrose with about 50% of its sweetness. It is produced by enzymatic rearrangement of the glucose-fructose linkage of sucrose and is usually crystallised as the monohydrate. Unlike the non-nutritive sweeteners it is fully digestible and caloric, but the rearranged linkage is hydrolysed slowly, giving a more gradual release of glucose and fructose than sucrose. It is supplied as a white crystalline powder and manufactured into powders, tablets and capsules.
