Lactic Acid (Liquid)

2-Hydroxypropanoic acid (lactic acid)

Lactic Acid is 2-hydroxypropanoic acid (CAS 50-21-5, C3H6O3, MW 90.08), a hydroxy acid designated E270 and used as a mild acidulant and pH buffer. Food-grade lactic acid is produced by microbial fermentation of carbohydrates and is normally supplied as a concentrated aqueous solution of about 80 to 90%. It gives a soft, dairy-like acidity milder than citric or tartaric acid and also serves as the acid for lactate buffer salts. It is supplied as a clear syrupy liquid and manufactured into liquids, powders and gummies.
