Lactitol (Monohydrate)

Lactitol (4-O-beta-D-galactopyranosyl-D-glucitol)

Lactitol (CAS 585-86-4, C12H24O11, MW 344.31) is a disaccharide sugar alcohol designated E966, with roughly 30 to 40% of the sweetness of sucrose. It is produced by catalytic hydrogenation of lactose, the sugar of milk, so it is a dairy-derived ingredient that must be declared for milk and is not suitable for vegan formulations. Chemically it is galactose glycosidically linked to a sorbitol unit, which distinguishes it from the glucose-based maltitol and isomalt. It is supplied as a white crystalline powder and manufactured into powders, tablets and capsules.
