DL-Malic Acid

DL-Malic acid (2-hydroxybutanedioic acid)

DL-Malic Acid is the racemic form of 2-hydroxybutanedioic acid (CAS 6915-15-7, C4H6O5, MW 134.09), a dicarboxylic organic acid designated E296 and used as an acidulant and pH-adjusting agent. It is produced synthetically by hydration of maleic or fumaric acid, giving the DL mixture, and is purified to a Ph.Eur./FCC grade of 99.0 to 100.5%. Compared with citric acid it gives a smoother, longer-lasting tartness at a lower use level. It is supplied as a white crystalline powder and manufactured into powders, tablets, gummies and liquids.
