Maltitol (Crystalline)

Maltitol (4-O-alpha-D-glucopyranosyl-D-sorbitol)

Maltitol (Crystalline) is the disaccharide sugar alcohol maltitol, 4-O-alpha-D-glucopyranosyl-D-sorbitol (CAS 585-88-6, C12H24O11, MW 344.31), designated E965, with roughly 75 to 90% of the sweetness of sucrose and a sugar-like body. It is produced by hydrolysis of starch to maltose followed by hydrogenation, then crystallised to a USP/Ph.Eur./FCC grade of at least 98%. Its near-sucrose sweetness and bulk distinguish it from the lower-sweetness polyols such as isomalt and lactitol. It is supplied as a white crystalline powder and manufactured into powders, tablets, gummies and liquids.
