Neotame is N-[N-(3,3-dimethylbutyl)-L-alpha-aspartyl]-L-phenylalanine 1-methyl ester (CAS 165450-17-9, C20H30N2O5, MW 378.46), a high-intensity sweetener designated E961 and roughly 7,000 to 13,000 times sweeter than sucrose. It is a derivative of the aspartame dipeptide in which an added dimethylbutyl group blocks enzymatic release of phenylalanine, so unlike aspartame it requires no phenylketonuria declaration. It is more heat and pH stable than aspartame and is used at very low levels. It is supplied as a white to off-white crystalline powder and manufactured into powders, tablets, gummies and liquids.
