Pullulan is a water-soluble polysaccharide of maltotriose units joined by alternating alpha-1,4 and alpha-1,6 glucosidic linkages (CAS 9057-02-7, empirical formula (C6H10O5)n), designated E1204. It is produced by fermentation of starch sugars with the fungus Aureobasidium pullulans, giving a clean-label, non-animal polymer with low oxygen permeability that is valued for vegan capsule shells and films. As a polymer it is characterised by grade rather than a single molecular weight. It is supplied as a white to off-white powder and manufactured into capsules and tablet films.
