L-(+)-Tartaric Acid

L-(+)-Tartaric acid (2,3-dihydroxybutanedioic acid)

L-(+)-Tartaric Acid is 2,3-dihydroxybutanedioic acid (CAS 87-69-4, C4H6O6, MW 150.09), a dihydroxy dicarboxylic acid designated E334 and used as an acidulant and as the acid partner in effervescent couples with bicarbonate. The food-grade material is the naturally occurring L-(+) isomer recovered from grape and wine by-products, purified to a Ph.Eur./FCC grade of at least 99.5%. It gives a sharp, clean sourness distinct from the softer malic and the citrus-like citric acids. It is supplied as a colourless to white crystalline powder and manufactured into powders, tablets and gummies.
