Thaumatin

Thaumatin (sweet protein from Thaumatococcus daniellii)

Thaumatin (CAS 53850-34-3) is a sweet-tasting protein of about 207 amino acids and a molecular weight near 22,000 daltons, extracted from the fruit of the West African plant Thaumatococcus daniellii and designated E957. It is roughly 2,000 to 2,500 times sweeter than sucrose with a slow onset and lingering liquorice-like sweetness, and at low levels it also functions as a flavour enhancer and bitterness masker. As a single protein rather than a small molecule it is given by approximate molecular weight rather than a molecular formula. It is supplied as a cream-coloured powder and manufactured into powders, tablets, capsules and liquids.
