Trehalose (Dihydrate)

alpha,alpha-Trehalose

Trehalose is the non-reducing disaccharide alpha,alpha-trehalose (anhydrous CAS 99-20-7, C12H22O11, MW 342.30), a glucose-glucose sugar with roughly 45% of the sweetness of sucrose that is widely used as a stabiliser for proteins, structure and texture as well as a mild sweetener. It is produced enzymatically from starch and is normally crystallised and supplied as the dihydrate. Its non-reducing linkage gives it high stability and low browning, which sets it apart from reducing sugars such as dextrose. It is supplied as a white crystalline powder and manufactured into powders, tablets, capsules and liquids.
