Xanthan Gum

Xanthan gum (microbial heteropolysaccharide)

Xanthan Gum is a high-molecular-weight heteropolysaccharide (CAS 11138-66-2), designated E415 and produced by fermentation of sugars with the bacterium Xanthomonas campestris. It gives very high viscosity at low shear, strong particle suspension and good freeze-thaw and pH stability, and is used to control viscosity and texture in liquids and gummies; it is specified by mesh and clarity grade rather than a single molecular weight. It is supplied as a cream-coloured free-flowing powder and manufactured into powders, liquids and gummies.
