Ascorbyl Stearate

L-ascorbic acid 6-stearate

Ascorbyl Stearate is a fat-soluble ester of vitamin C, L-ascorbic acid 6-stearate (CAS 25395-66-8, C24H42O7, MW 442.59), formed synthetically by esterifying ascorbic acid with stearic acid (food additive E305). Like ascorbyl palmitate it is lipophilic and oil-dispersible rather than water-soluble, the defining physical distinction from the free acid and the mineral ascorbate salts of this family. Its acyl group is the eighteen-carbon stearate rather than palmitate's sixteen-carbon chain, giving it a slightly higher molecular weight and a correspondingly lower ascorbic acid fraction per gram than ascorbyl palmitate. It is an off-white powder that we manufacture into softgel, capsule and powder formats.
