We balance sweetness equivalence against a sugar reference, blend high-intensity sweeteners with bulk polyols for mouthfeel, and select masking systems to offset bitterness or off-notes from actives in a formula. You define the taste target and format, and each batch ships with a Certificate of Analysis and full documentation.
