Natural Maltol

3-Hydroxy-2-methyl-4H-pyran-4-one

Natural maltol is the single pyranone 3-hydroxy-2-methyl-4H-pyran-4-one (CAS 118-71-8, C6H6O3, molecular weight 126.11), used as a flavour enhancer that rounds and lifts sweetness and aroma within a flavour system. It occurs naturally in roasted and caramelized plant sources and is standardized to at least 99 percent maltol at FCC grade. With the lowest molecular weight of the three single-compound isolates in this family, it differs from vanillin's vanilla character and menthol's minty, cooling profile by acting as a general aroma and sweetness enhancer, and unlike the proprietary sweetness-modulating system it is a single defined molecule rather than a compounded blend. It is supplied as a crystalline powder and is manufactured into powder, tablet and gummy dosage formats.
