Rebaudioside M, fermentation-derived (Reb M; CAS 1220616-44-3, C56H90O33, MW 1291.3) is chemically identical to leaf-derived Reb M but is produced by fermentation using genetically modified Yarrowia lipolytica rather than by leaf extraction (E960b). It is standardised to >=95% Reb M. It shares the same formula and molecular weight (1291.3) as the leaf and enzymatic Reb M grade, but differs in source origin, microbial fermentation rather than the plant, and in its regulatory identity, E960b versus E960a/E960c. Supplied as a white crystalline high-intensity sweetener powder, it is manufactured into powders, tablets, capsules, liquids and gummies.
