Natural Lycopene (Tomato Oleoresin)

(all-E)-2,6,10,14,19,23,27,31-octamethyl-2,6,8,10,12,14,16,18,20,22,24,26,30-dotriacontatridecaene (all-trans-lycopene, psi,psi-carotene)

Natural Lycopene is the red, acyclic C40 carotenoid all-trans-lycopene (psi,psi-carotene; CAS 502-65-8, C40H56), extracted from the ripe fruit of the tomato. Its conjugated polyene backbone carries no terminal ionone rings, setting it apart from the ring-closed carotenes of the same molecular formula, and it is a lipophilic, oil-soluble pigment. This grade is recovered by extraction of tomato into an oleoresin standardized to roughly 5-15% total lycopene in oil, and is also supplied as cold-water-dispersible beadlet powders. It differs from the synthetic and Blakeslea trispora fermentation grades, which are the identical molecule, in being a plant-extracted oleoresin rather than a chemically assembled or fermentation-derived concentrate, and it typically carries a lower stated assay than the fermentative grade.
