L-Glutamine is the free-form L-isomer of the amino acid glutamine (CAS 56-85-9; C5H10N2O3, molecular weight 146.14) and the most widely traded glutamine raw material. It is produced by microbial fermentation and supplied as an underivatized crystalline powder. Unlike the family's L-alanyl-L-glutamine dipeptide or the N-acetylated derivative, it is the unbound free amino acid, which gives it the highest glutamine content per gram of the three forms while leaving it comparatively less stable in aqueous solution than the peptide-bonded grade.
