Potassium Ascorbate is the potassium salt of ascorbic acid, potassium L-ascorbate (CAS 15421-15-5, C6H7KO6, MW 214.21), produced to FCC grade. Neutralizing ascorbic acid with potassium yields a pH-neutral, buffered, water-soluble ascorbate whose monovalent potassium counter-ion parallels the sodium salt rather than the divalent calcium and magnesium salts. It carries a single potassium ion per ascorbate unit and contributes potassium in place of the acidic proton of the free-acid form. It is a white crystalline powder manufactured in capsule, tablet and powder formats.
