Monk Fruit Juice Concentrate is a liquid sweetener and flavour system pressed and concentrated from Siraitia grosvenorii fruit, standardized to roughly 65 degrees Brix and about 3.5% mogroside V. It is made by juicing the fruit and evaporating it to a high-solids syrup, so it retains the fruit's naturally co-occurring soluble solids alongside the mogrosides rather than being purified to a single glycoside or a dry standardized extract. Unlike the powdered 25%, 50% and 95% grades it is a viscous liquid at a defined Brix and a much lower mogroside V concentration. It is supplied as a concentrated liquid. We manufacture it in liquid and gummy formats.
