Eisen(III)-maltol ist ein definierter dreiwertiger Eisenkomplex mit drei Maltol-Liganden pro Eisen, chemisch Eisen(III)-tris(maltolat) (CAS 33725-54-1; C18H15FeO9, MW 431.15), geliefert unter markengebundenen oralen Bezeichnungen wie Feraccru und Accrufer. Es enthält etwa 13% elementares Eisen, eine niedrige Beladung, die für einen organischen Drei-Liganden-Komplex typisch ist und nicht für ein einfaches Salz wie Eisen(II)-sulfat oder -fumarat. Der Maltol-Ligand wird synthetisch hergestellt. Es ist ein rotes bis rotbraunes Pulver, das zu Kapseln verarbeitet wird.
