Le maltol ferrique est un complexe de fer trivalent défini comportant trois ligands maltol par atome de fer, chimiquement le tris(maltolate) de fer(III) (CAS 33725-54-1; C18H15FeO9, MW 431.15), fourni sous des désignations orales de marque telles que Feraccru et Accrufer. Il apporte environ 13% de fer élémentaire, une faible teneur caractéristique d'un complexe organique à trois ligands plutôt que d'un simple sel tel que le sulfate ou le fumarate ferreux. Le ligand maltol est produit par synthèse. C'est une poudre rouge à brun-rouge, transformée en gélules.
