Enzymatically modified stevia (glucosylated steviol glycosides, E960d) is a Stevia rebaudiana extract in which the native steviol glycosides have been transglucosylated with starch-derived glucose using cyclodextrin glucanotransferase (CGTase). The enzymatic reaction adds glucose to the parent glycosides, producing a mixture of glucosylated species with no single defined molecule, so it carries no discrete CAS number, molecular formula or molecular weight. This enzymatic glucosylation is what separates it from the unmodified leaf-extract grades such as Reb A, stevioside and the total steviol glycosides, and it corresponds to a modified taste profile relative to those grades. Supplied as a white to off-white high-intensity sweetener powder, it is manufactured into powders, tablets, capsules, liquids and gummies.
