Le fumarate ferreux est le sel de fer(II) de l'acide fumarique (CAS 141-01-5, C4H2FeO4), produit par synthèse en qualité USP/EP. C'est un sel d'acide organique avec le fer à l'état d'oxydation réduit +2, contenant environ 33% de fer élémentaire, une teneur nettement supérieure à celle des sels organiques gluconate ferreux ou lactate ferreux et à peu près comparable à celle du sulfate ferreux séché. Physiquement, c'est une poudre brun-rougeâtre à rouge-orangé d'une solubilité dans l'eau relativement faible par rapport aux sels sulfate ou gluconate.
