Le citrate ferrique d'ammonium est un complexe très soluble dans l'eau de fer ferrique, d'acide citrique et d'ammoniac (CAS 1185-57-5) plutôt qu'un sel unique défini, de sorte qu'il n'a aucune formule moléculaire ni masse moléculaire fixe et est normalisé à sa teneur déclarée en fer élémentaire. Il est fourni en une qualité brune apportant environ 16 à 18.5% de fer et une qualité verte apportant environ 14.5 à 16% de fer, les couleurs reflétant différentes proportions fer/citrate/ammoniac. Sa grande solubilité le distingue des agents d'enrichissement insolubles que sont le phosphate et le pyrophosphate ferriques. C'est une poudre granulaire hygroscopique transformée en poudres, liquides et comprimés.
